Protein Packed Pancakes
The Nutrition Twins comment:
Our clients love to throw together a quick meal combining these
pancakes and a sausage patty (a heart-healthy soy one like Morningstar
Farms brand Sausage Patties) or a low-fat chicken sausage, like
Bilinski’s brand.
Pancake Ingredients:
1 cup low-fat cottage cheese
3/4 cup egg substitute (equal to 3 eggs)
1/4 cup nonfat milk
1 cup whole wheat flour
½ cup sliced strawberries (or other berry)Sprinkle of cinnamon
2 tablespoons sugar or 2 tablespoons Splenda
Combine the first three ingredients in blender and mix until smooth. Add
flour and sugar and blend again. Then stir berries and cinnamon into mixture.
Spray a pan with non-stick cooking spray. When hot, pour the mixture into the fry-pan to make 12 pancakes. Cook until golden brown on both sides.
Note: Just one serving is a good source of fiber!
Makes 12, four-inch pancakes (6 servings); Each Serving: 2 pancakes:
